Brownie Brittle – Manufacturing Process

Brownie brittle is made by baking brownie batter into a thin, crisp sheet instead of a soft cake-like brownie.

1. Ingredient Weighing

All ingredients are accurately weighed to maintain texture, flavor, and crispness consistency.

2. Dry Mixing

Flour, cocoa powder, sugar, salt, and leavening agents are blended to ensure even distribution.

3. Wet Mixing

Eggs, oil/butter, vanilla, and liquid sweeteners are mixed separately to form a smooth base.

4. Batter Formation

Dry mix is gradually added to the wet mix to form a smooth, pourable brownie batter.
Chocolate chips, nuts, or inclusions may be folded in at this stage.

5. Depositing / Spreading

The batter is:

  • Deposited onto flat baking trays or

  • Spread thinly using a sheeter or spreading system
    Thickness control is critical.

6. Baking

  • Baked at controlled temperature (usually 160–190°C)

  • Longer bake time than regular brownies

  • Moisture is reduced to achieve a crisp, wafer-like texture

7. Cooling

The baked sheet is cooled on conveyors to:

  • Stabilize structure

  • Develop crunch

8. Cutting / Breaking

The sheet is:

  • Cut into squares, shards, or snack-size pieces
    OR

  • Broken into rustic brittle pieces

9. Optional Coating / Drizzle

Can be finished with:

  • Chocolate drizzle

  • Sugar dusting

  • Flavor coatings

10. Packaging

Packed in moisture-proof pouches or trays to preserve crispness.
