Manufacturing Process of Florentines

1. Preparation of Ingredients

  • Almonds, cashews, pistachios or mixed nuts are measured and lightly roasted.

  • Sugar, butter, cream/glucose, and honey are prepared for caramel.


2. Making the Caramel Base

  • Sugar, butter, and honey/glucose are heated together.

  • Mixture reaches soft-ball to medium caramel stage (approx. 115–120°C).

  • The mixture becomes glossy, thick, and golden.


3. Mixing Nuts & Fruits

  • Roasted nuts and dried fruits are folded into the hot caramel mixture.

  • The mixture becomes sticky and evenly coated.


4. Shaping

  • Small spoonful are dropped onto baking trays lined with silicone sheets.

  • The mixture naturally spreads, forming thin circles.

  • Shapes can also be created using ring molds for uniform size.


5. Baking

  • Baked at moderate temperature (150–170°C).

  • The caramel melts and creates the signature lace-like holes.

  • Edges turn golden brown and crisp.


6. Cooling

  • Florentines are cooled completely to achieve crisp texture.

  • They harden naturally as the caramel sets.


7. Chocolate Coating (Optional but Popular)

  • Once cooled, the bottom is coated with:

    • Dark chocolate

    • Milk chocolate

    • White chocolate

  • A fork is often used to create zig-zag wave patterns on the chocolate.


8. Packaging

  • Packed in:
