Manufacturing Process
1. Dough Preparation

Mix flour, starch, salt, leavening agents, and water in a kneader.

The dough should be smooth yet firm for extrusion or sheeting.
2. Extrusion / Sheeting
-
The dough is extruded into small shapes (rings, tubes, pops, or pellets) or sheeted and cut into bite-size pieces.

Pre-formed shapes are partially dried.
3. Drying (Pellet Formation)

If using a pellet-based process, pieces are air-dried or oven-dried to remove moisture (approx. 10–12%).
4. Frying / Roasting

Frying method: Deep fry the pellets at ~180°C until puffed and golden.

Roasted method (healthier): Puff using hot air in a continuous roaster for a light texture with less oil.
5. De-oiling / Cooling
-
Fried pops are passed through a de-oiling system or allowed to rest on absorbent conveyors to remove excess oil.
6. Seasoning Application

The warm pops are tumbled in a rotary flavor drum.

A mist of oil or seasoning slurry is sprayed, followed by dry masala powder coating to ensure even adherence.
7. Packaging

Once cooled, the seasoned pops are packed in nitrogen-flushed laminated pouches to preserve crispiness and flavor.
