Manufacturing Process of Almond Brittle

1. Ingredient Preparation

  • Almond Selection:

    • Use high-quality, uniform, raw or blanched almonds.

    • Moisture content should be low (<5%) to prevent sogginess.

  • Roasting:

    • Almonds are roasted at 150–160°C for 10–15 minutes to enhance aroma and crunch.

    • Cooling follows immediately to retain crispness.

2. Sugar Syrup Preparation

  • Cooking the Base:

    • Sugar, glucose syrup, and sometimes butter are heated in a jacketed kettle.

    • The mixture is boiled to 145–150°C (soft crack to hard crack stage).

    • Optional: small amounts of salt and vanilla for flavor balance.

  • Color Development:

    • As sugar caramelizes, it develops a rich amber hue and deep caramel aroma.

3. Mixing

  • Addition of Almonds:

    • Roasted almonds are added to the hot caramelized syrup and mixed thoroughly for even coating.

    • The mixture must be handled quickly before it hardens.

4. Forming and Shaping

  • The hot mixture is poured onto stainless steel or marble tables coated lightly with oil or silicone release.

  • Rolled out evenly with rollers to desired thickness (typically 3–6 mm).

  • Cut into sheets, bars, or bite-sized pieces while still warm.

5. Cooling and Breaking

  • Allow the slab to cool completely (room temperature or in cooling tunnels).

  • Once hardened, it’s broken or cut into clean shapes using mechanical cutters.

6. Coating (Optional)

  • For premium variants, the brittle may be half-dipped or drizzled with chocolate (dark, milk, or white).

  • Some variants add sea salt or flavor glaze on top.

7. Packaging

  • Packed in moisture-proof laminated films or tins to preserve crispness.

  • Nitrogen flushing is often used in pouches for extended shelf life.
