Manufacturing Process

1. Ingredient Preparation

All ingredients are weighed and checked for quality. Butter or shortening is softened to room temperature for easy creaming.

2. Creaming

Butter (or shortening) and sugar are creamed together in a planetary or continuous mixer until light and fluffy. This step aerates the dough, ensuring a tender crumb.

3. Mixing & Coloring

Eggs (if used), cocoa powder, vanilla essence, and red food coloring are added. The mixture is blended until uniform.

4. Dough Formation

Refined flour, baking powder, and salt are sieved and gradually added to the wet mix. The dough is mixed until it reaches the desired consistency — soft but not sticky.

5. Add-ins

White chocolate chips or nuts are folded in at this stage to maintain even distribution.

6. Shaping

The dough is portioned using wire-cut, rotary moulder, or hand-scooping machines depending on production scale. Cookies are placed on baking trays.

7. Baking

Cookies are baked at 160–180°C for 10–15 minutes (depending on thickness and size). Baking gives them a soft center with a slightly crisp edge.

8. Cooling

Cookies are cooled on wire racks or conveyor coolers to room temperature to prevent moisture retention.

9. Packaging

Once cooled, cookies are packed in nitrogen-flushed laminated pouches or trays to maintain freshness and aroma. Proper sealing ensures long shelf life and protection from humidity.
